Portobello Carpaccio with Chimichurri

This can easily be an appetizer, but I decided it would be lovely as a main.  Thinly sliced portobello mushrooms, thinly sliced, marinated in white wine and honey, then roasted and topped with a slightly spicy parsley and garlic sauce.

Roasted Cauliflower Steaks with Tomato and Gremolata

Thick cauliflower “steaks”, made in the classic French bistro steak method.  Served with a delicious tomato sauce and topped with a walnut parsley and garlic condiment.

Braised Jackfruit

Forget about the brisket.  This dish almost perfectly mimics the shreddable, melt in your mouth brisket.  It is cooked in a tomato and red wine.  Even the meat eaters will love this one.

Quinoa and Mushroom Stuffed  Squash

This is a hearty and filling dish.  Filled with quinoa, mushrooms, onion, garlic and meaty walnuts

Quinoa Cholent

This is a wonderful gluten free version of the hearty Sabbath Stew packed with potatoes, both white and sweet along with mushrooms.  Add matzo balls for a small addition.

Eggplant Matzo Mina

Traditionally a Sephardic meal, this just an eggplant lasagna made with matzo crackers rather than wheat noodles.
