Today is Molasses Bar Day (as well as Opera & Boy Scout day). Here’s an easy recipe for this afternoon.
EASY MOLASSES BAR COOKIES RECIPE
1 cup/200g. sugar
1 cup/227g butter
2 beaten eggs
1/2 cup/170g molasses
2 cups/240g flour
1 teaspoon/6g salt
2 teaspoons/12g baking soda
1 1/2 teaspoons/4.5g cinnamon
1 1/2 teaspoons/3.5g cloves
1 1/2 teaspoons/3g. ginger
1 cup/250ml hot coffee
Preheat oven to 350F/180C/Gas 4
Beat sugar and butter; add eggs and molasses. Sift flour with spices and soda. Add to mixture and beat well. Blend in hot coffee. Pour into 10 x 15 inch greased pan. Bake 20-25 minutes. While warm, ice with a simple glaze of 1 1/2 cups/180g confectioner’s sugar, 1 teaspoon/5ml vanilla and 2 to 3 tablespoons/30-45ml water. When cool, cut in squares. Makes 1 dozen. Freezes well.
