Blondie Brownie Recipe

by | Jan 22, 2018 | Recipes

If you love the chewy, buttery goodness of a brownie but crave something a little different, blondies are about to become your new favorite treat. Often called “blonde brownies,” these golden bars swap the cocoa and chocolate base for rich brown sugar and plenty of vanilla, creating a caramel-like flavor that’s utterly addictive. They’re soft and chewy in the center with lightly crisp edges — the perfect cross between a cookie and a brownie. Today (January 22) is National Blonde Brownie Day, so there’s no better excuse to fire up the oven and whip up a batch!

Why You’ll Love These Blondies

  • Ready in under 45 minutes
  • Only one bowl needed (less cleanup!)
  • Loaded with melty semi-sweet chocolate chips
  • Easy to customize with nuts, white chocolate, toffee bits, or dried fruit
  • Perfect for potlucks, lunchbox treats, or late-night cravings

Blondie Brownie RecipePrep time: 10 minutes
Bake time: 20–25 minutes
Yield: 24–30 bars (depending on how you cut them)
Ingredients

  • 2¼ cups (270g) all-purpose flour
  • 2½ teaspoons (12g) baking powder
  • ½ teaspoon (2g) salt
  • 1¾ cups (264g) packed brown sugar
  • ¾ cup (170g) butter or margarine, softened
  • 3 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 cups (340g) semi-sweet chocolate morsels (one 12-oz package)

Instructions

  1. Preheat oven to 350°F (180°C / Gas Mark 4).
  2. Grease a 15 x 10-inch (38 x 25 cm) jelly-roll pan.
  3. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, beat the brown sugar and softened butter until creamy.
  5. Add the eggs and vanilla extract; beat well.
  6. Gradually beat in the flour mixture until just combined.
  7. Stir in the chocolate morsels.
  8. Spread the batter evenly into the prepared pan.
  9. Bake for 20 to 25 minutes or until the top is golden brown.
  10. Cool completely in the pan on a wire rack before cutting into bars.

Pro Tip: For extra gooey centers, pull them out when the edges are set but the center still looks slightly underdone. They’ll finish setting as they cool! Delicious Variations

  • Nutty Blondies — Stir in 1 cup chopped walnuts or pecans
  • White Chocolate Raspberry — Swap semi-sweet chips for white chocolate and add fresh or frozen raspberries
  • Toffee Crunch — Mix in toffee bits and a sprinkle of sea salt on top
  • Double Chocolate — Add ½ cup cocoa powder and extra chocolate chips

These blondies pair beautifully with a cold glass of milk, a scoop of vanilla ice cream, or even a drizzle of caramel sauce. Ready to celebrate National Blonde Brownie Day the right way? Try the recipe and let us know how they turned out!
