Ingredients

  • 4 boneless, skinless chicken breasts

  • ¼ cup (59 ml) all-purpose gluten-free flour, cornstarch, potato starch, or rice flour
  • 1 tablespoon (15 ml) olive oil
  • 4 peaches, pitted and sliced into eighths (or bite-sized pieces)
  • 1 fresh rosemary branch, leaves removed and minced
  • 3 ounces (85 g) brandy
  • ⅓ cup (89 ml) chicken stock
  • 2 tablespoons (30 ml) rice cream cheese (or your favorite dairy-free or regular cream cheese)

Instructions

  1. Season the chicken generously with salt and pepper on both sides. Place the flour (or starch) in a shallow plate or large plastic bag. Coat each chicken breast, shaking off any excess.
  2. Sear the chicken. Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan. Let it heat for 15–30 seconds. Sauté the chicken for about 4 minutes per side until golden brown. Remove the chicken from the pan and set aside.
  3. Build the sauce. In the same skillet, add the brandy, chicken stock, minced rosemary, and peach slices. Cook for 2–3 minutes, allowing the peaches to soften and the alcohol to cook off slightly.
  4. Finish the sauce. Stir in the rice cream cheese until fully combined. Continue cooking for another 1–2 minutes until the sauce thickens beautifully.
  5. Return the chicken. Nestle the chicken breasts back into the pan to warm through and absorb all those wonderful flavors.
