  • ¾ cup (150 g) brown sugar
  • ¼ cup (60 ml) heavy cream OR soy creamer, room temperature
  • ½ cup (113 g) butter OR vegan butter (such as Earth Balance), room temperature
  • ½ tablespoon (7 ml) water
  • 4 ounces (113 g) dark chocolate (use dairy-free for vegan version)

Instructions

  1. Prepare the muffin tins: Line 12 mini muffin cups with mini muffin liners.
  2. Add the almonds: Divide the coarsely chopped smoked almonds (108 g) evenly among the 12 liners, placing them at the bottom.
  3. Make the caramel: In a heavy-bottomed saucepan, combine the brown sugar (150 g), heavy cream or soy creamer (60 ml), butter or vegan butter (113 g), and water (7 ml).
  4. Cook the caramel: Stir over medium-low heat until the mixture is smooth and the sugar has completely melted. Stop stirring and bring the mixture to a boil. Continue cooking on medium-low heat (without stirring) until a candy thermometer registers 250°F / 121°C, about 5–7 minutes.
  5. Cool slightly: Remove from heat and let the caramel cool for 30 seconds.
  6. Assemble the base: Carefully spoon the warm caramel over the almonds in each muffin liner. Allow the caramel to harden at room temperature for 1 hour.
  7. Melt the chocolate: Place the dark chocolate (113 g) in a small double boiler (or heatproof bowl over simmering water) on low heat. Stir until melted, smooth, and glossy.
  8. Top with chocolate: Spoon the melted chocolate over the hardened caramel layer in each cup.
  9. Chill: Refrigerate for at least 30 minutes until the chocolate is set.
