There are many variations and uses for adobo paste or marinade. This one is a bit more on the a version learned in Santa Fe. This goes great with chicken too. Add some vinegar and use as a marinade for pork or ever flank steak.

Serves 4

1 tablespoon/15ml brown sugar
Juice of 2 limes
Grated rind of 1 lime
1 clove garlic, minced
1 teaspoon/5ml Italian Seasoning
3 tablespoons/45ml ground chili powder
2 teaspoons/10ml olive oil
(4) 5 ounce/142g filet mignon steaks

Mix brown sugar, lime juice, rind, garlic, Italian seasoning and chili powder together in a small bowl. Preheat large pan over medium high heat. Drizzle filets with oil and rub spice mix all over. Cook for 2 minutes on all sides for rare to medium rare.
Serve with mashed potatoes and corn.
