  • ½ cup (75 g) dried apples
  • ½ cup (75 g) dried cranberries
  • ½ cup (75 g) raisins
  • 6 dried apricots, cut into slivers (about 40 g)
  • ¼ cup (60 ml) brandy
  • 2 tablespoons (30 ml) honey
  • ½ vanilla bean, slit lengthwise (or ½ teaspoon / 2.5 ml pure vanilla extract)
  • 1 cinnamon stick (about 7 cm / 2¾ inches long)
  • 1 bottle (750 ml) Rioja red wine or Merlot
  • 2 cups (480 ml) club soda

Instructions

  1. In a large saucepan, combine the dried apples, cranberries, raisins, apricots, brandy, honey, vanilla bean, and cinnamon stick.
  2. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil. Remove from heat and let it cool slightly.
  3. Stir in the full bottle of red wine. Transfer everything to a large pitcher or jar.
  4. Cover and refrigerate for at least 4 hours (ideally overnight) to allow the flavors to meld.
  5. Just before serving, stir in the club soda for refreshing fizz.
  6. Serve over ice in glasses. Use a slotted spoon to add some of the beautiful spiced fruit to each glass.
