I never heard of these until that movie came out; Fried Green Tomatoes. We bought an older book titled Best Recipes From The Backs Of Boxes, Bottles, Cans & Jars in a thrift shop, found the recipe and loved it. This recipe is for any colour tomato, and in fact was written for half ripe tomatoes. If you don’t have evaporated milk,don’t fret. We’ve made them without it, using instead the flour, egg, breadcrumb or cornmeal approach. This recipe is from the Pet Milk company.
Serves 4 meals or 8 appetizer portions
4 medium half ripe tomatoes, washed
1/2 cup/68g plain all purpose flour
2 1/2 teaspoons/12ml salt
2 1/2 teaspoons/12ml sugar
1/4 teaspoon/1ml ground black pepper
3/4 cup/190g/180ml evaporated milk
Oil for frying (not olive oil)
Cut washed tomatoes in 3/4 inch/1.9cm pieces. Place on paper towels to drain. Combine the flour with salt, pepper and sugar. Dust the tomatoes on both sides. Add the milk to the remaining mixture, and whisk to combine. Add enough oil to come halfway up the sliced tomatoes to a heavy skillet and heat until the oil shimmers. Dip the tomatoes into the batter. Carefully add them to the hot oil (you’ll have to do this in batches). Cook until golden brown then flip over. This will take 2-3 minutes on each side. Remove from oil and let rest on a wire rack. Sprinkle with more salt while still hot.
