Serves: 2 sandwiches
Prep time: 10 minutes
Cook time: 0 minutes (assuming bacon and eggs are pre-cooked or cooked separately)
Ingredients

  • 4 slices gluten-free bread (such as Canyon Bakehouse Heritage Honey Bread), toasted — about 120–140 g total
  • 30 g (2 tablespoons) mayonnaise
  • 115 g (4 oz) sliced roast turkey
  • 4 slices bacon (about 60–80 g), cooked until crispy
  • Butter lettuce leaves (4–6 leaves, about 30–40 g)
  • 4–6 slices ripe tomato (about 120–150 g)
  • 1 medium avocado (about 200 g), sliced
  • 40–60 g blue cheese crumbles
  • 2 large eggs (about 100 g total), cooked sunny-side up

Instructions

  1. Toast the bread: Toast all 4 slices of gluten-free bread until golden and crisp.
  2. Spread the mayo: Spread the mayonnaise evenly on one side of each toasted slice (about 7–8 g per slice).
  3. Assemble the sandwiches: Layer the ingredients as desired. A classic club style works well:
    • Start with one slice of toast (mayo side up).
    • Add roast turkey.
    • Layer on tomato slices and butter lettuce.
    • Add avocado slices and a sprinkle of blue cheese crumbles.
    • Top with crispy bacon.
    • Place the second slice of toast on top (mayo side down), or build open-faced and crown with a sunny-side-up egg for extra richness.
  4. Finish and serve: Cut each sandwich in half diagonally. Serve immediately while the bacon is crisp and eggs are warm.

Tips for Success

  • Gluten-free bread: Use a sturdy gluten-free bread that toasts well. Canyon Bakehouse or your favorite brand works great.
  • Avocado: Choose a ripe but firm avocado for the best slices.
  • Blue cheese: Adjust the amount to suit your taste — it adds a nice salty, tangy contrast.
  • Make it your own: Add a thin spread of Dijon mustard or a few pickles for extra flavor.
  • Meal prep: Cook bacon and eggs ahead of time for even faster assembly.

This gluten-free roast turkey club delivers all the classic club sandwich satisfaction without the gluten. The creamy avocado and blue cheese take it to the next level!YADA Chef – Delicious gluten-free recipes for every table.
