Ingredients
- ½ cup/85g quinoa
- 1 small onion, finely chopped
- 6 oil-packed sun-dried tomatoes, drained and finely chopped
- 15 ounce/425g can White beans (cannellini), rinsed and drained, divided
- 1/2 cup corn/72g
- 2 cloves garlic, minced
- 2 teaspoons/10ml steak seasoning
- 1 tablespoon/15ml flax seed mixed with 3 tablespoons/45ml water
- 8 hamburger buns

Instructions
Step 1
Mix the flax seed and water in a small bowl, stirring well. Let it sit for 5 minutes to thicken, creating a natural egg substitute.
Step 2
In a small saucepan, combine quinoa with 1½ cups/375ml water and a pinch of salt. Bring to a boil, then cover and reduce heat to medium-low. Simmer for 20 minutes until the quinoa is cooked.
Step 3
In a medium nonstick skillet, cook the sun-dried tomatoes, onion, and garlic over medium heat until the onion is softened. Transfer this mixture to a food processor.
Step 4
Add ¾ cup quinoa/139g, 3/4 cup/319g beans, and the flax mixture to the food processor. Blend until smooth, then transfer to a large bowl.
Step 5
Stir in the remaining quinoa, beans, and corn. Adjust the seasoning to taste, ensuring a balanced flavor profile.
Step 6
Preheat your oven to 400F/200C/Gas Mark 6. Line a baking sheet with foil and parchment paper. Shape the bean mixture into 8 patties and place them on the prepared baking sheet. Bake for 25-30 minutes, or until the patties are crisp on top. Serve on hamburger buns and enjoy!
