Lime (YaDa’s Key Lime) Pie Recipe

Our version of Key Lime Pie is not that sickly sweet (and nasty green) version you buy at the grocery or restaurant.  It is more along the lines of a traditional fare.  Also in this recipe are alternative ingredients to accommodate almost any dietary requirement.

 

Lime (YaDa’s Key Lime) Pie Recipe

What you will need:

1 8 ounce package of cream cheese (you can use the standard, traditional, OR a soy, tofu, or other alternative version)

1 can of Eagle brand sweetener (OR see vegan recipe alternative below) — Note, a can of Eagle brand sweetener is about 10.5 fluid ounces which is 1 1/3 (or so) cups, the 14 ounce reference on the can is the weight

3 1/2 ounces Key Lime juice

4 egg yolks ( OR 1/2 cup extra firm tofu) — Note, if you are using the tofu, you are going to want to start mixing the tofu in the blender/mixer first to remove as many lumps as possible

1 graham cracker crust (see recipe below)

 

This is what you do:

Cream your cream cheese and your can of condensed milk and whip the dickens out of it.

When thoroughly mixed, add one egg yolk at a time and whip extra well.

Add your lime juice and whip, whip, whip some more.

Pour into your pie crust.  — Note, often, using ramekins, we will simply put the graham cracker crust on the bottom and not on the sides, these will be individual servings.

Bake in a 350 degree oven, using a water bath for 20 minutes.  — Note, your pie will not look done.  Do not over bake.

Remove from oven, let cool for 45 minutes on the counter then refrigerate for a minimum of 4 hours, overnight is best for the pie to completely setup.

 

Vegan (Sweetened) Condensed Milk Recipe

What you will need:

3 cups soy, OR rice, Or other milk

1/2 cup sugar (for more nutrients, use evaporated cane sugar)

1/2 teaspoon vanilla extract

salt

 

This is what you do:

Mix your “milk” and sugar in a saucepan and cook over medium heat stirring constantly.

You will stir until you have a 1.5-1.3 cups of liquid left.

Remove from heat.

Add your vanilla and a pinch of salt and mix well.

Cool before using.

 

Graham Cracker Crust

This what you will need:

1 1/2 cups ground graham crackers

6-8 tablespoons butter (Or alternative), melted

 

This is what you will do:

Mix your graham crackers and melted butter in a bowl.

Press your mixture into a 8 or 9 inch pie plate

Bake at 375 degree oven for about 7 minutes and cool.

If you have a recipe which calls for an unbaked pie shell, chill for 1 hour prior to filling.
