James Bond is the picture of glamour and sophistication. His drink is a vodka martini “Shaken NOT Stirred”. Bring that feel to the table by combining the perfect martini with succulent chicken. Black tie not required.
Serves 4
4 boneless chicken breasts
1/2 lemon, sliced
¼ teaspoon/1ml salt
⅛ teaspoon/.5ml fresh ground black pepper
2 tablespoons/30ml olive oil
3 cloves garlic, minced
¼ cup/60ml vodka
1 tablespoon/15ml dry vermouth
¼ cup/60ml green olives
2 tablespoons/30ml Earth Balance, divided in two
juice of ½ lemon, about 1 teaspoon/5ml
grilled lemon slices
Season chicken with salt and pepper while heating a large skillet over medium high heat. Add oil and and let heat up. Add lemon slices and cook until slices are caramelized. Remove slices and reserve.Saute chicken 3 – 4 minutes per side. Add garlic and cook for 30 seconds. Pour in vodka and vermouth, simmer for 2-3 minute or chicken is cooked through. Remove chicken to a plate. Raise heat and add olives, boil for 3-4 minutes and the sauce is reduced. Remove from heat and whisk in the butter one piece at a time. Stir in lemon juice. Pour over chicken.
Serve with rice and vegetable.
