Simple Syrup Recipe (for the Margarita Without Orange Liqueur)

This is the easiest homemade sweetener for cocktails. It dissolves instantly in cold drinks (unlike granulated sugar) and keeps for weeks in the fridge.

Basic Simple Syrup (1:1 ratio)

Yield: About 2½ cups (enough for multiple pitchers of margaritas)

Ingredients

  • 2 cups (400g) unbleached pure cane granulated sugar
  • 2 cups (475ml) water

Instructions

  1. Combine sugar and water in a medium saucepan.
  2. Heat over medium heat, stirring occasionally, until the sugar completely dissolves (about 3–5 minutes). Do not boil hard — you just want it to dissolve.
  3. Remove from heat and let it cool completely.
  4. Pour into a clean glass bottle or jar. Store in the refrigerator for up to 4 weeks.

Pro Tip: For a richer mouthfeel, make a 2:1 rich simple syrup (2 cups sugar + 1 cup water). It’s slightly sweeter, so you may need a little less in the margarita.

Flavored Variations (optional)

  • Lime-Infused: Add the zest of 2 limes while heating, then strain after cooling.
  • Agave Simple Syrup: Replace half the sugar with agave nectar for a more tequila-friendly sweetener.
  • Herb-Infused: Add fresh mint, basil, or rosemary while heating, then strain.
