Serves 4
4 Pita Breads, sliced in half
2 cups/565 g hummus
4 handfuls of alpha sprouts
1/2 red onion, thinly sliced
1 cucumber, sliced
1 tomato, sliced
Place the pita bread cut sides up. Spread 1/4 cup/59 ml hummus on each slice. Next on start to layer alpha sprouts, red onion, cucumber and tomato on one side of each sandwich. Place the top half on the sandwich and slice in half to eat.
