Davey Crockett’s Bars Recipe

There’s a particular kind of cookie that never quite makes it to a cooling rack. You mix it, pat it straight onto the sheet, and bake it into one big, golden slab that you cut while it’s still warm. These oatmeal chocolate chip bars are exactly that: thick, chewy, and deeply brown-sugary, with bittersweet chips that stay soft in the center and toast just a little at the edges.

The method is old-fashioned and almost too simple. Shortening, sugar, brown sugar, and eggs get creamed together, then flour, oats, baking soda, and baking powder go in, followed by vanilla and a generous cup of chocolate chips. Optional nuts can join the dry ingredients if you like a little crunch. Press the dough evenly onto a lightly greased sheet with greased fingers, bake at 350°F for 10–15 minutes, and you’re done. No scooping, no spacing, no waiting for individual cookies to set.

What you get is closer to a blondie than a drop cookie: sturdy enough to pack, tender enough to eat straight from the pan, and easy to scale when a crowd is coming. Bittersweet chips keep the sweetness in check; the oats give it body. If you grew up with pan cookies that disappeared before they cooled, this is that recipe.

 

1c/190g shortening
1c/200g sugar
1c/220g brown sugar
3 large eggs
2c/250g AP flour
2c/180g oatmeal
1t/5g baking soda
1t/5g baking powder
1c/175g chocolate chips (bittersweet preferred)
1t/5ml vanilla

Cream shortening, eggs, and sugars. Add dry ingredients.

Add Vanilla and chocolate chips. (Use a lightly greased cookie sheet) With greased fingers, pat mixture evenly on a cookie sheet.

Bake at 350F for 10-15 minutes.

(1c/100-150g of nuts may be added along with dry ingredients.)

** A variation is to substitute coconut oil for the shortening (give a coconut flavor). White chocolate chips work instead of the traditional chocolate. We had leftover ingredients from a personal chef cook and thought we’d give it a try. They worked well. **
