Ingredients:

 2 teaspoons baking powder

1 cup/125g flour

1/4 teaspoon salt

1 cup/260ml milk

1 egg, lightly beaten

1 teaspoon/5ml melted butter

Directions:

Sift the dry ingredients. Add the egg and milk and stir gradually to make a smooth batter, add melted butter.  Heat and grease lightly a griddle or skillet.  Pour the cakes on the hot griddle/flat top.  When the cakes are full of bubbles turn with a pancake turner, brown the other side.  Grease lightly after each baking.  Serve with fresh berries or maple syrup and butter.

Pro Tips for Perfect Griddle Cakes

  • Batter consistency: It should be thick but pourable. Add a splash more milk if it feels too thick.
  • Test temperature: Drop a small amount of batter on the griddle — it should sizzle gently. Too hot and they’ll burn; too cool and they won’t rise properly.
  • Don’t press down: Let them cook undisturbed for the best fluff.
  • Keep warm: Place finished pancakes on a baking sheet in a 200°F (95°C) oven.
  • Make ahead: Batter can be made the night before and stored in the fridge (stir gently before using).

Delicious Variations

  • Blueberry Griddle Cakes: Fold ½ cup fresh or frozen blueberries into the batter.
  • Banana Pecan: Add mashed ripe banana and chopped pecans.
  • Chocolate Chip: Stir in mini chocolate chips.
  • Buttermilk Version: Swap milk for buttermilk and add ½ teaspoon baking soda for extra tang and tenderness.
  • Whole Wheat: Replace half the flour with whole wheat flour.

Serving SuggestionsServe these classic griddle cakes with warm maple syrup, a pat of butter, and fresh fruit. They also pair beautifully with bacon, sausage, or scrambled eggs for a hearty breakfast.
