Pro Tips for Success

  • Riper bananas = sweeter treats — Use bananas with plenty of brown spots for maximum natural sweetness.
  • Make ahead — Bake the cookies and freeze the banana pieces in advance. Assemble just before serving for the best texture.
  • Storage — Wrap assembled sandwiches individually in parchment or plastic wrap and store in the freezer for up to 2 weeks. Let sit at room temperature for 2–3 minutes before eating.
  • Texture boost — For chewier cookies, don’t over-process the oats — leave a little texture.
  • Flavor variations — Add a spoonful of peanut butter to the dough, swirl in berries, or mix in cocoa powder for a chocolate banana version.
