Patum Peperium/Gentleman’s Relish Recipe

If you love bold, savory flavors, Gentleman’s Relish (officially known as Patum Peperium, mock-Latin for “pepper pâté”) is a British classic that deserves a permanent spot in your fridge. This intensely flavored anchovy paste, rich with butter and warm spices, is traditionally used very sparingly a little goes a very long way.

Originally created in 1828 by John Osborn, an Englishman living in Paris, Patum Peperium became a favorite among gentlemen of a certain era. It was marketed as a sophisticated spread for hot toast, and later found its way into scrambled eggs, sauces, and classic Victorian dishes like Scotch Woodcock. While the commercial version has sadly been discontinued in recent years, this homemade version captures the spirit of the original beautifully.

Makes enough for 2-3 rolls of Savoury Delights aka Savory Shortcrust (20-30 guests)

 

200 g anchovies, drained & coarsely chopped or paste

2 tablespoons fresh white breadcrumbs

150 g butter

1/4 teaspoon/1ml cayenne pepper

1 pinch ground cinnamon

1 pinch freshly ground nutmeg

1 pinch ground mace

1 pinch ground ginger

1 dash fresh ground black pepper (good twist)

2 stalks of green onions, sliced thinly to sprinkle over the paste

 

Using a mortar and pestle, pound the anchovies and butter until they resemble a smooth paste. You could also use a food processor.

Stir in the breadcrumbs, spices and pepper and spoon the paste into a large ramekin. Cover and chill before serving.
