This is the easiest homemade sweetener for cocktails. It dissolves instantly in cold drinks (unlike granulated sugar) and keeps for weeks in the fridge.
Basic Simple Syrup (1:1 ratio)
Yield: About 2½ cups (enough for multiple pitchers of margaritas)
Ingredients
- 2 cups (400g) unbleached pure cane granulated sugar
- 2 cups (475ml) water
Instructions
- Combine sugar and water in a medium saucepan.
- Heat over medium heat, stirring occasionally, until the sugar completely dissolves (about 3–5 minutes). Do not boil hard — you just want it to dissolve.
- Remove from heat and let it cool completely.
- Pour into a clean glass bottle or jar. Store in the refrigerator for up to 4 weeks.
Pro Tip: For a richer mouthfeel, make a 2:1 rich simple syrup (2 cups sugar + 1 cup water). It’s slightly sweeter, so you may need a little less in the margarita.
Flavored Variations (optional)
- Lime-Infused: Add the zest of 2 limes while heating, then strain after cooling.
- Agave Simple Syrup: Replace half the sugar with agave nectar for a more tequila-friendly sweetener.
- Herb-Infused: Add fresh mint, basil, or rosemary while heating, then strain.
How Much to Use in the Margarita Pitcher? Start with 1 cup (250ml) of simple syrup — you can always add a little more if you prefer it sweeter.
