- 4 fresh sushi-grade tuna fillets (about 170–200g / 6–7 oz each)
- 2 teaspoons (10 ml) sesame oil, divided
- ⅛ teaspoon (0.5 ml) ground cloves
- ⅛ teaspoon (0.5 ml) ground allspice
- 5 ounces (145 g) wasabi peas
- ¼ cup (60 ml) coconut aminos (or tamari)
- 1 teaspoon (5 ml/g) fresh ginger, minced
- ¼ teaspoon (2 ml) oyster sauce
- 3 drops fish sauce

- Crush the wasabi peas: Place the wasabi peas in a zip-top plastic bag and crush them with a rolling pin or the bottom of a heavy pan until you have coarse crumbs. Pour onto a large plate or platter.
- Season the tuna: Pat the tuna fillets dry. Brush one side of each fillet with half of the sesame oil (about 1 teaspoon / 5 ml total). Sprinkle evenly with the ground cloves and allspice, rubbing gently to distribute.
- Crust the tuna: Press the seasoned side of each tuna fillet firmly into the crushed wasabi peas so they adhere well. (Crust only one side for the best presentation and texture.)
- Sear the tuna: Heat a large skillet over medium-high heat. Add the remaining sesame oil. When the oil is hot, place the tuna in the pan, crusted-side down. Sear for 1–2 minutes per side, depending on thickness and desired doneness. The outside should be nicely browned and crusty while the center remains pink and rare to medium-rare.
- Make the dipping sauce: While the tuna cooks, whisk together the coconut aminos, minced ginger, oyster sauce, and fish sauce in a small bowl.
- Serve immediately: Slice the tuna against the grain and serve with the dipping sauce on the side and sautéed mustard greens.
